Light Recipe -- White Fish With Sesame-Scallion Sauce
4 servings; approximate preparation time 10 minutes
1/4 cup finely sliced scallions (green onions)
1 medium clove garlic, peeled and minced or forced through a press
1 teaspoon finely grated gingerroot
2 tablespoons light soy sauce
3 tablespoons water
1/4 teaspoon hot chili oil
2 teaspoons sesame oil
2 teaspoons sesame seeds
1/2 teaspoon sugar
1 tablespoon lemon juice
1 1/3 pounds white fish fillets, such as orange roughy, rockfish or cod
1. Combine the scallions, garlic, ginger, soy sauce, water, chili oil, sesame oil, sesame seeds, sugar and lemon juice.
2. Put the fish fillets on a rack in a baking pan, or on a broiler pan. Spoon a little of the sauce over the fillets. Bake in a preheated 450-degree oven 12 minutes per inch of thickness, or until done.
3. Spoon the remaining sauce over the fish and serve.
