Quick recipe: Roasted Salmon with Citrus Herb Sauce

Serves 4 1 large onion, thinly sliced

2 ½ tablespoons olive oil, divided

½ cup orange juice, divided

4 pieces (about 1/3 pound each) salmon fillet

3 tablespoons chopped fresh dill, divided

½ teaspoon kosher salt, divided

Freshly ground black pepper

2 tablespoons thinly sliced green onions

1 tablespoon lemon juice

1. Preheat oven to 450 degrees. Place onions in a 9-by-13-inch baking dish and drizzle with 1 ½ tablespoons oil and 2 tablespoons orange juice. Roast on center oven rack about 20 minutes or until the onions are soft and golden. Remove from oven and push onions to side of dish.

2. Place salmon in baking dish, sprinkle with 2 tablespoons dill, ¼ teaspoon salt and some fresh ground pepper. Drizzle with remaining tablespoon oil. Spoon onions over the top and bake on center oven rack about 10 to 12 minutes or until cooked through.

3. While the salmon is cooking, combine the remaining tablespoon dill, remaining salt and some pepper, green onions, orange juice and lemon juice. Pour orange sauce over the roasted salmon and serve.
